I tend to grill for several meals all at once...I can do that, I live alone. :)

Today's extravaganza:

Take 8 chicken thighs -- including skin and bone. Slather on the Hot Madras Curry Powder. I wish I could remember where I picked it up. Let sit for about 30 minutes.

Mix up a marinade of buttermilk, lime juice, more curry powder and crushed red pepper. Add chicken, and be sure to scrape all the powder into the marinade. Stick in the fridge all day. Take out when it's time to light the grill.

Thaw a skirt steak. When it's thawed, slather the steak with a Caribbean spice blend that I picked up at Whole Foods. Let that sit a while.

Light the charcoal and let it get ready. Grill the chicken, basting occasionally with the marinade until it's done. After all the chicken is cooked, throw the steak on the grill and cook until it's rare.

I'm thinking the word for all this meaty goodness is...sublime. And I have several more meals of it too. :)

I'm thinking I need to get to Penzey's tomorrow to pick up more spices. Really I do.
