Well, this morning I fixed the disappointing lamb dish and made it all yummy!

I sliced up the lamb. Melted a bit of butter in some olive oil and mixed in about 1/4 tsp cayenne, 2 tsp garam masala, and grated some nutmeg into it. Added a couple of cloves of minced garlic. I dumped in the lamb, tomatoes, mushrooms and juices from the experiment and sauteed them all for a bit. I added a touch of sherry, about 1 tsp tamarind concentrate, 1 tbsp of tomato concentrate and let that simmer for a few minutes. I dumped in a can of coconut cream (thicker than coconut milk) and some hot Madras curry power. I let it ALL simmer together for about 15 minutes.

Now THAT'S what I'm talking about. Spicy and flavorful lamb, rich, thick and delicious sauce. Yum.

Now I have to do some laundry today and go get the ingredients for my stuffed dates. Well, and a bit of cleaning as well.
