Rogan Josh is an Indian spice mixture traditionally used on lamb -- I've used it and it's delicious. :) The jar I purchased from Penzey's also states that it's good on beef...again, I've used it and it is. However, I have to say that there's something wrong and faintly disturbing about using an Indian spice mixture while cooking an animal that they hold as sacred.

Tonight, I hadn't planned my dinner and was running late. I looked at what I had and tried Rogan Josh on some chicken thighs sitting in the fridge and it was definitely a winner to my taste buds -- particularly when paired with a dusting of chimayo chile.

Tomorrow morning, I'll be putting some thighs into a marinade for grilling tomorrow night. I may use the Rogan Josh. Or possibly curry. Or maybe jerk. Or tandoori. Oh, the flavor possibilities. And then the grilling...mmmmmmmmmm.
