Who knew that marzipan was SO easy to make? Certainly not me. And to think, if I hadn't gone searching for stuffed dates recipes I might never have known.
And homemade marzipan tastes better (to me, anyway) than the stuff I get at the store. It COULD be the rosewater, eh?
Anyway...
Put a 1:1 ratio of blanched almonds and powdered sugar (I used two cups each) into a food processor with the metal blade. Turn it on. Process until it starts to fold on itself. Add some rosewater, almond extract or vanilla (I used mostly rosewater with just a touch of vanilla) until it holds together like stiff dough. Shape into whatever you want your marzipan to look like. I'm thinking of experimenting with orange blossom water at some point. :)
