Well, yesterday I wasn't feeling so hot...sort of like I had food poisoning, plus being really tired. I made it in to work, but I didn't do any walking.
Then yesterday afternoon, I discovered just how easy it is to make hot fudge (this would be the indulgence part of the post...in case you're wondering). I've been wanting hot fudge for some ice cream I've had in the freezer for a couple of months, but I keep *forgetting* to buy it. Yesterday, armed with a recipe and a few very simple ingredients, I made hot fudge sauce. And REALLY good hot fudge sauce...and even better, hot fudge sauce with cinnamon and chile (I used Ancho chile powder). Because I can. And then I started thinking of all the other possible changes -- like peppermint, cointreau, red wine, or orange peel, or raspberry, or indeed, any sort of flavoring that one likes with one's hot fudge sauce. And 20-odd ounces of home made sauce was significantly cheaper than buying mediocre store bought brands. Who knew?
12 oz. chocolate chips (I used semi-sweet, but special dark would be great too)
1 14 oz can condensed milk (use condensed, not evaporated -- I have a recipe for that as well, but it IS different)
2/3 cup water
pinch salt
1 tbsp vanilla
any extra flavorings your little heart desires.
Put chocolate, condensed milk, water and salt (plus spices, if any) tnto a heavy sauce pan. Bring almost to a boil, stirring. When it reaches the boiling point, take off heat. Add vanilla.
At first I didn't think it would come together, because it was kind of thin and grainy. But when it just reached that boiling point, it thickened up beautifully and got rich and thick and delicious. Fabulous over ice cream.
FWIW, if you want to use evaporated milk, don't use the water, but add 1/2 cup sugar and 1-2 tbsp butter to the sauce pan.. I haven't tried this version. But these two versions seem to be the most popular of the on-line hot fudge recipes. There are others, but they're more complicated and use powdered cocoa, etc.
This morning I got up and did a two mile walk. See, the fitness portion is shorter, but I did it. :)
