It's kind of amazing how few people take me for a Cancerian... But cooking and feeding people is one of the places where those Cancerian tendencies burst forth.

The Blue Star family gathering is being held this weekend a couple of hours south and east of Minneapolis. In fact, it's starting today. In theory I'm going in to work tomorrow, so I'm actually driving down tomorrow. However as of now my actual appearance at work is in doubt. grave doubt. I'm tired, stressed and just plain done with my job at the moment.

And on top of it, I'm cooking. A lot. I decided that since I'm trying to eat in a particular style (i.e., low carb), that I would prefer to do my own food, since then I know exactly what went into it. Plus, I have slow cookers, and I'm not afraid to use them. :o) And then a friend with some serious food allergies...besides doing the low carb thing...mentioned that she was worried about what she would be eating this weekend. So I thought, well, I can feed two as easily as myself. And then two other friends are just coming for the day, so I offered to feed them as well. You see, when it comes to food, I just want to take care of everyone.

And so, I've gone completely around the bend. I mean I'll be there from tomorrow afternoon through Sunday morning, feeding me and one other person for THOSE days, plus two others for a single meal. And I've made: Chicken with Mushrooms & Leeks, Greek Meatloaf, Pork with Prosciutto & Artichoke Hearts, Pesto, Baked Ricotta with Pesto, Hot Mexican Chocolate Almond Cereal, Cinnamon Roasted Pecans, and whipped cream cheese with chives. And I'm still thinking of other things I can make.

I've entered the land of the truly obsessed. I have THREE slow cookers (actually four, since the third one came with a bonus mini crock). Plus, my new tool of tools arrived today -- a KitchenAid 11 cup food processor. Top of the line, baby! Plus, it's in black, which makes me SO VERY happy. I wouldn't have been able to get it if I hadn't had a refund credit. But now I'm coming up with even more ideas... An intervention may be required. Stop me before I cook again.

Actually, the only disappointment in any of these dishes has been the pecans. I followed the directions, and didn't stir them. Bad idea. They burned. :o( Note to self, when roasting pecans...even in a slow cooker...stir them every half hour.

The chicken with mushrooms and leeks has gone from being wonderful to totally sublime, with the addition of a new secret ingredient. *happy dance*

But I've still got to do a load of laundry and pack. And try to get some sleep. And maybe...if the wind is in the right quarter...I'll actually go to work in the morning. But I'll tell you, a four day weekend is looking REALLY nice right now.
