Well, yesterday I watched the US Vs. John Lennon. Very interesting documentary regarding John's development into a radical activist and the machinations of the Nixon government to deport (and theoretically silence) him. The comments of several people concerning parallels between the Nixon government and the current regime were interesting, showing how the tide has shifted since the 60s/70s. Fascinating stuff.

I also made chicken salad...actually a twist on Waldorf salad.

2 sliced green onions
3/4 chopped pear (ripe, but still crisp) -- I ate the last quarter while making the salad
about 6-8 oz chopped up chicken from my last roasted chicken
2-3 index fingerfuls of chipotle powder (in other words, bigger than a "pinch")
1/4 cup chopped pecans
spritz of lime juice
2-3 tbsp mayo (NOT Miracle Whip!)

All mixed together, and eaten with multigrain crackers. Serves 2. And yes, I DID split it up into two portions. ;)

Totally yummy!

I'm not sure what the two things have in common, but they were both on my mind just now. :)

I first bought Catalan Spinach at the Whole Foods deli counter. It really is sublime. Then I discovered how easy it is to make at home...and, as always, significantly cheaper. No amounts here, since I rarely measure for this type of dish. Basically, I add *enough* of each ingredient.

baby spinach
roasted garlic (whole cloves are lovely)
pine nuts
golden raisins
olive oil
salt, pepper

First add olive oil to a large saute pan. Saute the garlic, pine nuts and raisins for a couple of minutes. Add spinach. Salt and pepper to taste. Stir, cover and let spinach wilt. Crushed red pepper is a nice addition. :)

Enjoy! It's lovely either hot or cold.
