My latest batch of chipotle mayo ROCKS the house! Steamed artichoke with aforesaid mayo is just sublime. And I know it's fresh and doesn't contain all kinds of crap.

1 egg
1 tbsp lemon (or lime) juice
1 largish chipotle in adobo
1 cup macadamia nut oil

Put all ingredients in a jar and blend with stick blender until emulsified. Chill in fridge. Slather on anything you can find. :) Eat within 3-4 days, not that this will be a huge problem.
