Well, I’ve been craving salty stuff recently. PMS rearing its ugly head again. And then yesterday, I had a brilliant idea…I’ve always loved chili lime chips, why don’t I try making chili lime almonds. So I made them in my crock pot as an experiment. They turned out fabulous! Here’s the recipe:
Melt 4 tbsp of butter on “High” in your crockpot. Stir in about 1 tbsp lime juice and 1 or 2 tbsp chili powder (I used the fiesta chili powder from Whole Foods). Then stir in 1 lb of raw almonds. Set the crockpot on “Low” and cook for two hours. Stir several times (basically, I set my timer for 30 min at a stretch, then stir). You may want to add a bit more lime juice during the cooking (I added another tsp or two). Mix 1 tbsp kosher salt with another 1 or 2 tbsp chili and once the almonds are done, sprinkle this mixture over them and stir to blend. Cool with cover off. Store in Tupperware. They’re very lovely!
